Eggplant can be grown anytime in Georgia after Spring’s last Frost and before Fall’s first Frost! For best results, we recommend breaking this long eggplant growing season into two shorter ones; Spring and Fall. The Spring Growing Season begins after the last Spring Frost, ending with a final harvest in the Summer. The Fall Growing Season begins in the Summer, ending with a final harvest in the Fall. Specific Recommended Growing Dates are listed below.
Florida Market Eggplant is a high-yielding and hardy heirloom variety. It produces an abundance of 7 to 9 inch long fruit. Florida Market became popular in the late 1800’s because of its productivity and heat tolerance. The flesh is a pale white. Eggplant is delicious oven-baked, pan-seared, and cubed in stews and soups. The best tasting eggplants are fresh picked from the garden!
Expect Eggplant Bushes to reach a height of 2 to 4 feet at maturity. Once plants begin producing fruit, expect the fruiting to continue. Regular harvesting encourages more vigorous production.
Eggplants thrive in well-drained soil and plenty of sunlight. Make sure that plants receive plenty of water (don’t let them dry out).
